Scalloped potatoes are plausible, although despite being an embarrassingly large fan of cream of mushroom soup, I still prefer from-scratch scalloped potatoes to cream-of scalloped potatoes, so maybe or maybe not.
I wonder how closely the mash-with-kale resembles any version of colcannon? Spouse had it growing up as 1. fried bacon with cabbage and 2. cubes of velveeta mixed into 3. mashed potatoes. But there are many versions, and I could see kale instead of cabbage…
